Aly and Duke

Courage

Aly is from Mexico, she got Duke the boxer dog when she was 5 yrs old.

As a child she enjoyed playing outside. She loved playing jump rope and even won a jump rope contest.  She also loved going on vacation to her grandma’s house. Her grandmother spoke Spanish with an accent from Spain, so Aly would love trying to mimic the accent to sound like her. After seeing folk dancers from Brigham Young University visiting their town in Mexico, she wanted to travel.  Her father additionally would bring chocolates back from his visits internationally.

As an adult she married her husband who also speaks two languages and they had three children, both are bilingual. She has overcome self doubt and outside criticism to speak so well. She has since taught English as a second language in America and was paid to translate a high school code of conduct handbook for Spanish speaking families.  As for travel she has traveled to over 10 countries and looks forward to doing more.

She also enjoys interior decorating, getting additional 2 years of college education to learn more about it.

Favorite Recipe - Chicken Mole

This Mexican chicken mole recipe is flavorful with seasoned chicken, then slathered with mole poblano sauce.

Cook Time 40 mins
Total Time: 50 mins

    • 1 tablespoon peanut oil or use olive oil or lard

    • 1 medium onion chopped

    • 1 jalapeno pepper chopped

    • 2 pounds bone-in chicken

    • 1 teaspoon ancho powder

    • 1 teaspoon garlic powder

    • 1 teaspoon Mexican oregano

    • Salt and pepper to taste

    • 1.5 cups chicken stock or broth

    • 2 cups mole poblano sauce

    • FOR GARNISH: Sesame seeds, spicy red pepper flakes, fresh chopped cilantro

  • 1.     Add peanut oil to a large pot and heat to medium heat.

    2.     Add the onion and jalapeno pepper and cook 3-4 minutes to soften.

    3.     Pat the chicken dry and season all sides with ancho powder, garlic, oregano and salt and pepper.

    4.     Sear the chicken 5 minutes per side, until lightly browned.

    5.     Add the broth or beer. Cover and simmer for 30 minutes, or until the chicken is cooked through and measured 165 degrees F internally with a meat thermometer.

    6.     Remove chicken from the pot and add to a medium sized pan. Pour mole sauce over the chicken and gently heat until the sauce is warmed.

    7.     Garnish and serve.
